Abstract (English): One of the most economically viable processes for the bioconversion of lignocellulosic agroindustrial wastes is the production of edible mushrooms by solid state fermentation (SSF), achieving high value-added products as a result of the process. It is important to evaluate the degree of biodegradation presented by the different substrates by Pleurotus, since it is a process of multifactorial dependence. The objective of this work was to evaluate the biodegradation of lignocellulosic agroindustrial wastes: coffee pulp, cocoa shell and others. The criteria of bioconversion, biological efficiency, the Carbon/Nitrogen (C/N) ratio and the changes in the initial and final composition of the residues were used. Variations are shown in: C/N, crude fiber, lignin, polyphenols, caffeine, organic matter, and in the bioconversion levels in both residues. The most notable were the decreases in the content of caffeine, crude fiber, C/N, lignin and polyphenols. In the evaluation made of different lignocellulosic wastes are evident many aspects: the Pleurotus species used is very important, the chemical composition and the physical characteristics of the wastes for the development and growth of Pleurotus and therefore for its biodegradation. Some factors show a direct or indirect relationship with biodegradation, but they cannot be considered absolute conditioning factors since they are subject to the influence of many other factors. The cultivation of Pleurotus spp mushrooms can be considered as a prominent biotechnological process for the reduction and recovery of wastes, which can be used to produce value-added products and therefore contribute to the circular economy. Abstract (Spanish): Uno de los procesos más viables económicamente para la bioconversión de residuos lignocelulósicos es la producción de setas comestibles por fermentación en estado sólido (FES), alcanzándose como resultado del proceso, productos de alto valor agregado. Es importante evaluar el grado de biodegradación que presentan los diferentes sustratos por Pleurotus, pues es un proceso de dependencia multifactorial. El objetivo de este trabajo es realizar la valoración de la biodegradación de los residuales: pulpa de café, cáscara de cacao y otros. Se utilizaron los criterios de bioconversión, eficiencia biológica, la relación Carbono/Nitrógeno (C/N) y los cambios en la composición inicial y final de los residuos. Se muestran variaciones en: C/N, fibra bruta, lignina, polifenoles, cafeína, materia orgánica, y en los niveles de bioconversión en ambos residuos. Los más notorios fueron las disminuciones en el contenido de cafeína, fibra bruta, C/N, lignina y polifenoles. En la valoración realizada de diferentes residuales, se evidencia la importancia que tiene la especie Pleurotus empleada, la composición química y las características físicas de los residuales para el desarrollo y crecimiento del Pleurotus y por tanto, para su biodegradación. Algunos factores muestran una relación directa o indirecta con la biodegradación, pero no se pueden considerar condicionantes absolutas pues están sujetas a la influencia de otros muchos factores. El cultivo de setas Pleurotus spp puede ser considerado como un proceso biotecnológico prominente para la reducción y valorización de residuos, los cuales pueden usarse para producir productos de valor añadido y por tanto aportar a la economía circular.
