Abstract (English): This study assessed the teaching and practice of professional ethics in a Nutrition program at a private university using a qualitative action-research approach, including observation, content analysis, and interviews with faculty and students. The analysis showed a lack of ethics-related topics in key courses. Although faculty acknowledge its importance, ethics is not actively promoted in the classroom. Students demonstrated limited knowledge of professional ethics, mainly due to insufficient academic training. The findings highlight the need to incorporate ethics into the curriculum and provide ongoing training for faculty to enhance ethical competencies in future nutritionists. Strengthening ethical education is essential to improve professional performance and ensure better quality of care in the health sector. [ABSTRACT FROM AUTHOR]
Abstract (Spanish): Este estudio evaluó la enseñanza y práctica de la ética profesional en la carrera de Nutrición de una universidad privada, mediante una metodología cualitativa de investigación-acción que incluyó observación, análisis de contenido y entrevistas a docentes y alumnos. El análisis reveló la escasa inclusión de temas éticos en asignaturas clave. Aunque los docentes reconocen su relevancia, no se promueve adecuadamente en el aula. Los estudiantes demostraron conocimientos limitados en ética profesional, atribuidos a la falta de formación académica en el área. Los resultados evidencian la necesidad de integrar la ética en el plan de estudios y ofrecer capacitación continua a los docentes para fortalecer las competencias éticas en los futuros profesionales y mejorar la atención en salud.
