Abstract (English): FMVZ has several teaching centers that possess the facilities to develop the entire production process, from milk extraction to the processing of the final product. CEPIPSA has the possibility of obtaining milk from the three most important milk-producing species and also has a cheese-making area. Overall, and considering the Center’s purpose of practical teaching and research, it is necessary to increase and deepen knowledge related to the GPP and GPM processes. In addition to the above, a current circumstance in the teaching process is the growing number of students in each of the subjects related to milk production, which demands an increase in teaching and pedagogical tools to improve the overall teaching process of milk extraction and processing. The development and implementation of GPPs and GMPs is primarily supported by current Mexican regulations, based on the Milk Product System, which has updated several of the standards for the milk production, transportation, and processing process in recent years. Some of the objectives were: to generate digital practical teaching tools focused on improving GPPs and GMPs using CEPIPSA as a production model; to promote academic development for those responsible through the implementation of refresher courses; and to propose research projects for academic staff. Educational materials (audiovisual) were developed to disseminate GPPs and GMPs for the production and processing of milk and its derivatives, allowing for the systematization and adaptation of practical courses. Abstract (Spanish): Para el proceso de enseñanza aprendizaje, la FMVZ, cuenta con algunos Centros de Enseñanza que poseen las instalaciones para desarrollar todo el proceso productivo, que va desde la obtención de la leche, hasta la transformación del producto final. El CEPIPSA, cuenta con la posibilidad de obtener leche de las tres especies de mayor importancia productiva en cuanto a leche se refiere, y de la misma forma, cuenta con un área quesería. En conjunto y teniendo en cuenta la finalidad del Centro que es la enseñanza práctica y la investigación, es necesario aumentar y profundizar en el conocimiento relacionado con el proceso de BPP y BPM. Adicional a lo anterior una circunstancia actual en el proceso de la enseñanza es el número creciente de alumnos que hay en cada una de las materias relacionadas con la producción de leche, lo que demanda en aumentar las herramientas didácticas y pedagógicas para el mejoramiento del proceso de enseñanza conjunto de la obtención y la transformación de la leche. El desarrollo e implementación de las BPP y las BPM, presenta su principal sustento en la normatividad mexicana vigente, basado en el Sistema producto leche, que ha actualizado varias de las normas en el proceso de obtención, transporte y transformación de la leche en los últimos años. Algunos de los objetivos fueron: generar herramientas digitales de enseñanza práctica enfocadas al mejoramiento de las BPP y BPM tomando como modelo de producción el CEPIPSA; promover la superación académica de los responsables mediante la implementación de cursos de actualización; plantear proyectos de investigación por parte del personal académico. Se elaboraron materiales didácticos (audiovisual) para la difusión de BPP y BPM para la obtención y transformación de la leche y sus derivados, que permitan la sistematización y adecuación de los cursos prácticos.
