Abstract (English):	All governments are responsible for protecting their populations against health hazards and business fraud in the food sector. Considering the expansion of international food trade in Cuba and the necessary protection of consumers, animals, plants and the environment in general, in our country a sanitary control system for food has been designed, taking into account the regulations in force in this matter, both national and international. The Environmental Radiological Surveillance Laboratory (LVRA) of the Radiation Protection and Hygiene Center (CPHR) has been in charge, since 2000, of the radiological surveillance of foods that are marketed in the national territory. This Surveillance Program is executed within the framework of the National Pollutants in Food and Water Surveillance Program, directed by the National Directorate of Environmental Health (DNSA) of the Ministry of Public Health (MINSAP). The tests carried out by the LVRA aim to verify compliance with the permissible levels for radionuclides in food in force in Cuba, as one of the elements that contributes to guaranteeing the food safety of both imported and nationally produced products. Abstract (Spanish):	Todos los gobiernos son responsables de proteger a su población contra los peligros para la salud y los fraudes comerciales en el sector alimentario. Considerando la ampliación del comercio internacional de alimentos en Cuba y la necesaria protección a los consumidores, los animales, las plantas y al medio ambiente en general, en nuestro país se ha diseñado un sistema de control sanitario para los alimentos, teniendo en cuenta las regulaciones vigentes en esta materia, tanto nacionales como internacionales. El Laboratorio de Vigilancia Radiológica Ambiental (LVRA) del Centro de Protección e Higiene de las Radiaciones (CPHR) tiene a su cargo, desde el año 2000, la vigilancia radiológica de los alimentos que se comercializan en el territorio nacional. Este Programa de Vigilancia se ejecuta en el marco del Programa Nacional de Vigilancia de Contaminantes en Alimentos y Agua, dirigido por la Dirección Nacional de Salud Ambiental (DNSA) del Ministerio de Salud Pública (MINSAP). Los ensayos que ejecuta el LVRA tienen como objetivo verificar el cumplimento de los niveles permisibles para radionucleidos en alimentos vigentes en Cuba, como uno de los elementos que contribuye a garantizar la inocuidad alimentaria tanto de los productos de importación como los de producción nacional.
