Abstract: With the improvement of people's health consciousness and the development of society, the demand for functional oils has increased dramatically. Woody oilseeds, as an important oil source, have become the promising candidate of healthy and high-quality oils. Aqueous enzymatic extraction method (AEE) is a green and effective strategy to extract and prepare high-quality woody oils, while the practical applications and free oil yields are restricted by the incomplete oil release and the significant emulsification. This paper summarized the recent progress of promoting the oil release and the demulsification for AEE to woody oilseeds. The oil release principles and emulsification mechanisms, typical methods and cases, advantages and disadvantages, and development orientations were systematically introduced. The challenges and perspectives in AEE to woody oils are highlighted. We hope that this review can provide references for selecting appropriate pretreatment and demulsification methods, and enlighten the promising advanced methods for woody oilseeds in practical applications.
