Abstract: The article presents an undergraduate chemistry laboratory experiment that exposes students to the essentials of a greener, chemoenzymatic synthesis of vanillin using biotechnological processes. Topics include the production of vanillin through the enzymatic oxidation of vanillyl alcohol by the enzyme eugenol oxidase (EUGO), the experimental design, and safety considerations.
