Title: Films based on proteins and polysaccharides: Preparation and physical–chemical characterization.
Authors: Guerrero, Pedro1, Garrido, Tania1, Leceta, Itsaso1, de la Caba, Koro1 koro.delacaba@ehu.es
Source: European Polymer Journal. Nov2013, Vol. 49 Issue 11, p3713-3721. 9p.
Subjects: Polysaccharides, Soy proteins, Liquid films, Fourier transform infrared spectroscopy, Hydrophobic compounds, X-ray photoelectron spectra
Abstract: Highlights: [•] Soy protein/agar films were homogeneous, transparent, and flexible. [•] Characterization by XPS and FTIR indicated soy protein–agar interactions. [•] XPS showed that agar incorporation changed the orientation of hydrophobic groups. [•] FTIR demonstrated changes in the secondary structure of soy protein. [Copyright &y& Elsevier]
