Abstract (English): This study aims to design an interactive educational board to promote healthy eating habits among children aged 18 to 36 months at the CNH "Mi Mundo Feliz" Child Development Center. The research addresses the need for early intervention in the formation of eating behaviors during early childhood, a critical stage for physical and cognitive development. The specific objectives include: investigating the nutritional needs and developmental characteristics of the target population; analyzing theories and existing studies on the impact of interactive education on healthy eating habits; and designing a didactic resource adapted to the children's sensory and cognitive abilities. The methodology integrates documentary review and field observation to ensure the relevance and effectiveness of the tool. The board incorporates visual and tactile elements, offering a playful and meaningful learning experience. In parallel, parents and caregivers participated in educational sessions to strengthen healthy practices at home. Results show increased acceptance of healthy foods among children and greater family involvement in nutritional education, contributing to the prevention of malnutrition and diet-related health issues at an early age. Abstract (Spanish): El presente estudio tiene como objetivo diseñar un tablero didáctico interactivo para promover hábitos alimenticios saludables en niños y niñas de 18 a 36 meses del Centro de Desarrollo Infantil CNH "Mi Mundo Feliz". La investigación parte de la necesidad de intervenir oportunamente en la formación de patrones alimenticios durante la primera infancia, etapa crítica para el desarrollo físico y cognitivo. Entre los objetivos específicos se incluyen: investigar las necesidades alimenticias y características del desarrollo infantil en esta población; analizar teorías y estudios sobre la influencia de la educación interactiva en la adopción de hábitos alimenticios saludables; y diseñar un recurso didáctico adaptado a las capacidades sensoriales y cognitivas de los niños. La metodología empleada combina revisión documental y observación de campo para garantizar la pertinencia del recurso. El tablero, con componentes visuales y táctiles, permite una experiencia de aprendizaje lúdica y significativa. Paralelamente, se incorporó la participación de padres y cuidadores mediante actividades formativas para reforzar la aplicación de hábitos saludables en el hogar. Los resultados evidencian una mejora en la aceptación de alimentos saludables por parte de los infantes, así como una mayor implicación familiar en la educación alimentaria, contribuyendo a la prevención de la malnutrición y enfermedades relacionadas con la dieta en edades tempranas.
