In this work, the nitrogen conversion factor in eggs Coturnix coturnix L. (Japanese quail), was determined. 850 eggs of Coturnix coturnix L. were analyzed, the maximum precipitation and extraction pH was determined by the Kjeldahl method, at different acidic and basic pH. The protein conversion factors found for white and yolk were 6.33 and 6.30 respectively. These results justify its consumption compared to other food sources, high in protein in the human diet. En el presente trabajo se determinó el factor de conversión de nitrógeno en huevos de Coturnix coturnix L. (codorniz japonesa). Se analizaron 850 huevos de Coturnix coturnix L., se determinó el pH de máxima precipitación y extracción mediante el método Kjeldahl, a diferentes pH ácidos y básicos. Los factores de conversión proteica encontrados para clara y yema fueron 6,33 y 6,30 respectivamente. Estos resultados justifican su consumo comparado a otras fuentes alimenticias, altas en proteínas en la dieta humana. [ABSTRACT FROM AUTHOR] |
