Abstract (English): For the prevention and control of foodborne diseases, many countries have established within their legislation "zero tolerance" for certain food pathogens. Based on this, rapid and modern techniques are necessary for detection; molecular methods allow us to satisfy such characteristics. With the aim of describing the usefulness of molecular biology techniques in food analysis, a documentary review of different methods was carried out, searches were carried out in Google Scholar, Medscape, Scielo and the most up-to-date information was included. Among the most frequently used tests for the analysis of food samples are: polymerase chain reaction, real-time polymerase chain reaction, microarrays, biosensors, high-throughput nucleic acid sequencing (pyrosequencing), and electrophoresis pulsed field gel; these techniques vary depending on the type of sample being analyzed and the purpose of the research. Molecular diagnostic techniques represent a promising alternative in the food field, due to their speed, high sensitivity and efficiency for the early detection of pathogenic microorganisms. Abstract (Spanish): Para la prevención y el control de las enfermedades transmitidas por alimentos, en muchos países tienen establecido dentro de su legislación "tolerancia cero" para determinados patógenos alimenticios, en función de esto, son necesarias técnicas rápidas y modernas para la detección, los métodos moleculares permiten satisfacer tales características. Con el objetivo de describir la utilidad de las técnicas de biología molecular en el análisis de alimentos, se realizó una revisión documental de diferentes métodos, se realizaron búsquedas en Google académico, Medscape, Scielo y se incluyó la información actualizada. Entre las pruebas empleadas con mayor frecuencia para el análisis de muestras de alimentos se encuentran: reacción en cadena de la polimerasa, reacción en cadena de la polimerasa en tiempo real, microarreglos, biosensores, secuenciación de ácidos nucleicos de alto rendimiento (pirosecuenciación) y electroforesis en gel de campo pulsado; dichas técnicas varían según el propósito de la investigación y el tipo de muestra que se analiza. Las técnicas de diagnóstico molecular representan una alternativa prometedora en el campo de análisis microbiológico de los alimentos, debido a su rapidez, elevada sensibilidad y eficiencia para la detección temprana de microorganismos patógenos.
