Abstract (English): For the prevention and control of foodborne diseases, many countries have established within their legislation "zero tolerance" for certain food pathogens. Based on this, rapid and modern techniques are necessary for detection; molecular methods allow us to satisfy such characteristics. With the aim of describing the usefulness of molecular biology techniques in food analysis, a documentary review of different methods was carried out, searches were carried out in Google Scholar, Medscape, Scielo and the most up-to-date information was included. Among the most frequently used tests for the analysis of food samples are: polymerase chain reaction, real-time polymerase chain reaction, microarrays, biosensors, high-throughput nucleic acid sequencing (pyrosequencing), and electrophoresis pulsed field gel; these techniques vary depending on the type of sample being analyzed and the purpose of the research. Molecular diagnostic techniques represent a promising alternative in the food field, due to their speed, high sensitivity and efficiency for the early detection of pathogenic microorganisms.
