| Abstract (English): |
Dietary fiber or alimentary fiber is defined as alimentary material, particularly from vegetal origin that is not hydrolysed by the human digestive tract enzymes. However, it may be fermented by the gut microflora. Many scientific investigations have been carried out about the physiological effects of dietary fiber in experimental animals and human population which have shown evidence that a low fiber intake may be associated to several diseases in industrialised countries around the world. The present work is basically focused on the revision and compilation of research works about quantification of alimentary fiber in some Venezuelan foods and its fiber components which may have beneficial effects on human nutrition. La fibra dietética o la fibra alimentaria, es considerada como material alimenticio particularmente de origen vegetal que no es hidrolizado por las enzimas secretadas por el tracto digestivo humano, pero que puede ser fermentada por la microflora del intestino grueso. Existen numerosas investigaciones realizadas hasta el momento en animales de experimentación y en muestras de poblaciones humanas, acerca de los efectos fisiológicos de la fibra dietética. Hay evidencia de que una baja ingesta de fibra en la dieta, puede estar asociada con enfermedades propias de países industrializados o desarrollados. La presente investigación, fue enfocada básicamente a la revisión y recopilación de trabajos realizados sobre la cuantificacion de la fibra alimentaria en algunos alimentos venezolanos y los efectos beneficiosos de ciertos componentes de la fibra en la nutrición humana.
