| Abstract: |
Objectives: To determine the allergenic potential of pineapple's chitinase and propose a bioinformatic model of the structure of this protein for the prediction of possible epitopes E, that would be related in allergic reactions to this fruit. Methods: From a DNA sequence of pineapple, previously reported, that translates for a protein similar to chitinases from other vegetable, using bioinformatic tools and databases available online, we obtained a computational model of pineapple's chitinase that was analyzed physically and chemically for the prediction of epitopes. Results: The model was generated as a 204 aminoacids protein, that was classified as a chitinase class I. The prediction and analysis of epitopes from multiple bioinformatic servers showed that they have properties (Relative Surface Area, RSA) which make them capable to be part of antigenic site. Conclusions: Pineapple's chitinase generated had similarities with a group of food allergens that has been related in the latexfruit syndrome, and could be responsible of allergies to this fruit. In addition, the ability to identify these epitopes is also useful in the design of Genetically Modified Foods. [ABSTRACT FROM AUTHOR] |
