| Abstract: | Tokyo and sushi have a lot in common. They are colourful and exciting, but confusing and challenging at times. For most people, they provide a first taste of Japan. The first Japanese dish we try will almost inevitably be sushi, and the first Japanese city we visit will be Tokyo. And they do both make strong first impressions. However, much of Japan is nothing like Tokyo, and much of what Japanese people eat is nothing like sushi. The truth about Japanese food is more complicated – and more delicious.
